My Labor Day Lunch. Tuna Cake with red, green peppers and onions, red cabbage, raw broccoli , carrots, and crisp bread. Full of protein and fiber.~RJ Jackson

1 can of albacore tuna, drained.

1/3 cup Panko Bread Crumbs

3 green onions (green and white parts), finely chopped

1/2 cup finely chopped red/green pepper

1/4 cup plain hummus

1 egg white

1 teaspoon Worcestershire sauce

1 teaspoon dry mustard

1/2 lemon, juiced

1/4 teaspoon garlic powder

1 teaspoon sea salt

Dash cayenne pepper

Flour, for dusting

1/4 cup coconut oil

Simple to make! In a large bowl, mix together all ingredients, except for the flour and coconut oil. Shape into patties and dust with flour. Heat oil in a large skillet over medium heat. When oil is hot, carefully place tuna cakes, in batches, in pan sear lightly until lightly browned, about 2  to 4 minutes on each side. Add your favorite garnish! RJ uses Wasa crackers, which are from Norway and can be found on the bottom shelf of the cracker section in your supermarket.  Some of their crackers are 100% whole grain, which makes them very crunchy compared to a Ritz cracker. She added a handful of raw veggies including carrots, shredded cabbage and broccoli.  Yum!
